HOMEMADE INSTANT NOODLE MIX SERIES: Instant cheesy Japanese curry udon/noodle mix

 

THE UNFAILING WONDER OF AMERICAN SINGLES THAT MELTS INTO THE MOST VISCOUS INTENTION TO BRING OUT A BIT OF CHILDISHNESS IN ALL OF US

WHAT:  Using Japanese curry cubes – another one of their culinary ingenuities – as a building foundation for an even more complex, cocoa-y and cheesy curry paste that will bring instant late-night slurping to a new height.

WHY:  It’s creamy.  It’s delicious.  And if you need more than that then slap on nostalgic as well.  Because Japanese curry, or shall I say kare, is a deep-rooted comfort in just about every Asian’s dietary habit.  And if done right, it will withhold the same standing in your life as well.

HOW:  Japanese curry cube, on its own, can be a bit sweet and lacking of intensity, born out of this culture’s rounder and more reserved disposition on tastes as well as, I suspect, philosophy.  In the effort to deviate from its original path, I have been for years adding my own “defectors” to bring it just where I like it, more curry powder for spiciness, cocoa powder for complexity, instant coffee for a touch of bitterness and fragrance, and a kiss of Dijon mustard for acidity.  Then last but not least, the junky yet unfailing wonder of American singles that melts into the most viscous intention to bring out a bit of childishness in all of us.

This versatile paste can be used to create, instantly if I may stress, an array of noodle-companions ranging from a milder and drinkable broth for a Japanese staple called kare udon, to a more powerful and creamy gravy to dress any noodles “dry-style” (my favorite), all the way to possibly being used as an instant mix for this fried rice.  A soft-boiled egg, an extra single, or even a nub of cold butter, hell let’s put a few McNuggets on top.  There’s really no possible way to go overboard with it.  And even if there is, it won’t judge.

 

Instant cheesy Japanese curry udon/noodle mix

Ingredients

  • 3 tbsp canola oil
  • 1 large onion, peeled and roughly chopped
  • 10 cloves of garlics, roughly chopped
  • 3 tbsp onion powder
  • 6 cups (1400 ml) low sodium beef or chicken broth
  • 1 regular box (230~250 grams) Japanese curry cubes, such as this one (see note *)
  • 5 slices of American cheese, torn into small pieces
  • 1/3 cup (30 grams) grated Parmigiano Reggiano cheese
  • 4 tbsp curry powder
  • 2 1/2 tbsp cocoa powder
  • 1 1/2 tbsp fish sauce
  • 1 tbsp ground cayenne, plus or minus to your liking
  • 2 1/2 tsp instant coffee
  • 1 tsp Dijon mustard

Instructions

  1. In a large, wide and deep skillet (the wide diameter creates more surface area and speeds up the reduction process), cook canola oil, onion, garlics and onion powder over high heat, until the edges of the onions are slightly browned. Add low sodium beef or chicken stock, continuing to boil over high heat, until the mixture is reduced down by 2/3, about 20 minutes.
  2. Strain the mixture through a fine sieve into another smaller pot, pressing on the solids to extract as much liquid as you can then discard the solids. You should have about 1 1/2 cup of liquid left (it can be slightly under but not more). Now add the curry cubes, American cheese, Parmigiano Reggiano cheese, curry powder, cocoa powder, fish sauce, cayenne, instant coffee and Dijon mustard. Cook and stir over medium heat, until all the ingredients are fully melted and evenly incorporated into a thick paste.
  3. Transfer into an air-tight jar and keep chilled in the fridge until needed. Can be kept for up to 1.5 (estimate) months in the fridge, or 3 months in the freezer.
  4. TO USE THE MIX: You can use the mix to make a lighter drinkable curry broth, or a stronger gravy-like sauce. To make a curry broth, bring 1 cup of water to a simmer and whisk in 3~4 tbsp of instant curry mix, and let simmer for a couple minutes. Add udon noodles or other noodles of your choice. To make a gravy-like sauce, cook udon or other noodles of your choice in boiling water according to instructions. Remove the noodles and set inside a serving bowl. Mix a few tbsp of the cooking water with curry mix until it reaches your desired consistency and intensity, then mix it evenly with the noodles. As a general finishing touch, torch a slice of American cheese on top until melty, and serve immediately.

Notes

* Japanese curry cubes, or curry sauce mix, can be easily found in all major Asian supermarkets and/or online. This recipe calls for one regular box, which ranges from 230~250 grams depending on the brands (but they do come in smaller packaging sometimes so make sure you check the package). And they also come in "mild", "medium", and "hot". Here I'm using "hot".

BEEF TARTARE WITH SEA URCHIN FROM THE NEIGHBORHOOD

IT HAD ME AT HELLO

Oh geez, in between life in general and an unexpectedly eventful visit to my OBGYN which involved an adorably named chocolate cyst, I’m going to quickly leave you with, nonetheless, a recipe for my favorite thing to eat these days.  This is a dish inspired by a restaurant called Neighborhood in Hong Kong’s central district, which serves predominantly French bistro-style dishes with a spritz of Japanese infusion, and in this case, classic beef tartare served with fresh sea urchin roe on top.  For the record, I have NOT had this particular dish at the restaurant.  It wasn’t offered on the menu by the time I visited, and so I created my own rendition at home.  The major difference is that their standard beef tartare is mixed with chopped raw oysters, which I omitted because fresh oysters just isn’t something that Hong Kong markets excel at, and for the many times that I’ve pushed my luck, I wish I hand’t, so.

But, having said that, you’ve got to try this.  I would want to sell you on how the creamy sweetness and foie gras-like richness of the sea urchin blend almost biblically beautiful with the irony savoriness of the beef tartare, and how the infusion of the two, including the cold and silky touches it feels on your taste buds, comes to a marvelous clash with the warm crunches of the toasted baguette. And I could go on.

But the truth is, if you’re my kinda people, it had us at hello.

THE PLAIN GENIUS OF MENCHI KATSU SANDO

IT HITS JUST THE RIGHT SPOT, ONE OF THE FEW LEFT IN OUR HYPER-STIMULATED MINDS THESE DAYS, WHERE IT STILL ACCEPTS OR EVEN CRAVES PURITY

As we know that there are plenty for the taking, but this is perhaps – as far as I know and hopefully true – Jason’s most obsessed of all perverse Japanese creations, the menchi katsu.

Menchi, meaning “minced”, and katsu, is anything “breaded and fried”.

It exists in many different forms and spirits, each and one of them equally bizarre to the conventional wisdoms of the west, but one in particular, the menchi katsu sando / fried ground pork patty sandwich, will send many scratching their heads inside a Japanese convenience store.  That is because its pure genius can only be realized upon one fateful encounter – one that reflects truly on its seemly simple but in fact, delicate preparations, and the childish yet complex satisfaction it plays on your tastebuds – which, unfortunately, can be a rare occurrence outside of Japan.  Actually, outside of Japan, this idea sounds more desperate than anything else.  Why do we want to fry a disk of ground pork – by the way, an almost comically massive disk of ground pork – then leave it with nothing else, and I mean absolutely nothing else, but just some tangy brown sauce in between two pieces of flimsy, flappy white breads?  You’ll question its painful simplicity, whether is from desperation, or, by choice.  Why not add something else to it?  Tomato?  Bacon?  Cheese?  Fried egg?  Jalapeno?  Two hotdogs and a jug of Bloody Mary with a mini umbrella?  Come on, anything, anything to satisfy this North American instinct to pile shit up.

But no.

I can’t explain it to you.  You’ll have to experience it.

But I can’t take you to Japan.  I can only bring the recipe home.

This recipe is my very controlled but slightly adapted, and perhaps,, in my opinion, enhanced version of the original.  And when I say that, I’m mostly referring to the katsu sauce.  Slight variations on this sauce are applied to a vast number of different dishes in Japan, like okonomiyaki and takoyaki to name a few.  But most of the recipe in English that I found online is, well, lacking, if not insulting.  Ketchup plus worchestire sauce, basically, with some soy sauce and sugar?  Please.  The sauce is much more complex and deserving of our respect than that, which requires several different angles of acidity and sweetness that adds up to be more than the sum of its parts.  There is a depth that, I feel, cannot be achieve with the conventional balance between vinegar and sugar, which is where “fruitiness” comes in aid.  Prunes.  Blended into the sauce, they built volume and flavours into the back-note, then pounded and added as a thin film in between the sandwich, they added textures and subtle sweetness.  This sauce plays brilliantly with the fatty richness – 35% fat if I failed to mention – of the menchi katsu, and brought both a voluptuous sort of moisture and adhesiveness to all parties.

You’ll realize why you don’t want to do anything else to it.  It hits juuust the right spot, one of the few left within our hyper-stimulated minds these days, where still accepts or even craves purity.

This is not just a slapped-on emergency sustenance.  There are thoughts and wisdoms, upon many generations, that evolved and stripped it down to its now, brilliant plainness.  If you are going to make it into a Big Mac, at least call it something else.

HOW TO WRAP ONIGIRI LIKE JAPANESE CONVENIENCE STORE

Hi, here’s a random video on how to wrap onigiri, aka rice balls, like those Japanese convenience stores.  The easy-to-pull-away wrapper separates the rice and the seaweed, keeping the seaweed crispy until serving.  This technique will make beautifully wrapped onigiri, perfect for your next picnic, work lunch, or as a gift!  A few notes on how to do it right:

  1. Use freshly cooked rice, never day-old, but wait until it’s completely cooled (so the steam doesn’t make the seaweed soggy).
  2. Use triangle-moulds to make the onigiri.
  3. Cut the seaweed and allow enough width to cover the sides of the onigiri.
  4. Cut a piece of parchment that is at least 2X the width of the seaweed.
  5. The parchment in the video didn’t actually cover the entire inner surface of the seaweed because it wasn’t wide enough.  Don’t make the same mistake.
  6. Label the onigiri and they’re going to be your newest edible gift.

A BALL OF REALLY GOOD RICE

The weather in Beijing is driving me mad.  Rainy, swampy, relentlessly brownish grey.  In all the fond days that I’ve been in this dump, all five years and counting, the summers have never been this wet.  Soaking wet.  I mean let’s face it, nothing here is pleasant to begin with I’ll give you that.  But for this region, a supposedly semi-desert climate for fuck sake, that for what it’s worth, the relatively dry summers and butt-cracks used to contribute as the pitiful silver-lining of being in this hell-hole.  The cherry on a very bad cake.  But lately, no.  Not this summer.  Every morning begins with a slow poach inside a thick tarred and slimy cloud of grossness – think the colons of Jabba the Hutt or inside Donald Trump’s comb-over under a baseball cap – then, comes the almost guaranteed torrential rains around 7 pm that marinates everything in a wet mop-like humidity.  Then the next day, it repeats.  Did I mention that the pollution congeals even more enthusiastically in its special sense of sarcasm?  Did I mention that it’s been like this, for weeks.

It’s an understatement to say that these days, I’m not happy much.  All the recent riots of Instagrams flaunting farmer’s markets, elf-like human beings and basic living bliss, only make me bleed jealousy and really hateful thoughts.  If I could stab your heirloom tomato in the abdomen right now, I’d gladly do so with gruesome gratifications and throw in all its cousins for good measure.  It’s also safe to say that these days, I don’t go out much.  The joy of grocery-runs has been reduced down a battle of mind-dragging chores, not to mention, that at any given seconds, the heaven could punish me with an acid-fueled downpour for daring optimistic thoughts.   These days, I made do with what I have.

THE SHIT I EAT WHEN I’M BY MYSELF – GRILLED CURRY CHEESE, iPHONE ONLY

NOT KNOWING IF (THE SWEAT) WAS DUE TO THE HEAT OF THE KITCHEN, OR HOT-FLASHES AS EARLY SIGNS OF MENOPAUSE

OK, so it’s been awhile since I last did The Shit I Eat When I’m By Myself Series, and I thought today – the day I turn 35, the day when the oestrogen has officially left the party, the day when avocado becomes a face-cream instead of food – is a good time to rekindle (it’s called letting it go).  And also, because I got this lovely birthday present from you-know-who, I thought I will follow Tiffany and do a post entirely shot/edited by iPhone 6 only!  Initially, I thought it would be the most liberating thing ever, not having to carry a heavy and bulky camera while dripping sweat, not knowing whether it’s due to the heat from the kitchen or hot-flashes as early signs of menopause…  But actually, trying to go back and fourth VSCO Cam and Snapseed to edit photos on a phone-screen, made me feel that this is probably more of a thing for the twenty-something hipsters, than the thirty-something demographic born with severe technology-defects.  So I don’t know… until now, I still can’t decide if I like working this way…

Anyhow, this is No. 5 for The Shit I Eat When I’m By Myself.  Sticking to the tradition of being completely non-sense, it’s a mixture of minced beef, melted Japanese curry cubes (boosted by cocoa powder!) and shredded white cheddar that you can keep in the fridge, then when emergency hits (like the day you turn 150), it can be quickly melt into a spicy and intense grilled curry cheese in between 2 slices of crusty country loaf (balanced by an added sweetness from raspberry jam!).

So enjoy, I’ll see you on the other side.

  2. Left pink eye that’s flirting dangerously with my right eye.
  3. Egg allergy plus one-lick-too-many from testing the magic 15-seconds scrambled eggs, gave this pre-middle aged face a few beautiful, custard-filled pimples.
  4. Tweezer rage.  That corner of my eyebrow is never coming back is it?
  5. Being forced to sit straight up so the rim of my tummy wouldn’t touch my thighs.  They’re so close…
  6. My building’s management office and the grocery store downstair are plotting together on my imminent suicide.  Think I have to move.
  7. But again. my neighbour’s bichon, Coco, has a rainbow-colored afro on her head.
  8. Watched Frozen again.
  9. A dream of myself laying on Beth’s kitchen island, blanketed and all, as one of her props among other things, then fell asleep on the table and went into a second level dream which I have absolutely no recollection of.  Inception style.
  10. Watched Frozen again.
  11. An email that almost made me pee my pants.

LAST SHIT – THE 3 FOUNDING DONBURI, THE ART OF EATING CANNED MEATS

(THEY CAN) TRANSFORM INTO SURPRISING DELICIOUSNESS OF ELEGANCE AND COMPLEXITY

THIS is the last post (for awhile at least) of the new week-long segment, The Shits I Eat When I’m By Myself.  Jason is coming home tomorrow, and if you were any decent, none of us is ever going to speak of what happened here in the last few days…  But even though we’re near the end of an epic run, I have meticulously kept the best, and I hope you agree, for the last.

I’m going to share with you what I eat, sunny or rainy, broke or stashed, then-young and now-old, then-slim and now-lumpy… by myself or not, doesn’t matter.  This.  This is what I actually eat, love to eat, and I mean, like all the time.  This is what raised me, put me through college, and every other weekday-nights along with the lovely grin of Jon Stewart.  This, completes me.  I never had a name for this before, but for the sake of easy reference, I will now call it – The 3 Founding Donburi, The Art of Eating Canned Meats.

Donburi, is Japanese “rice bowl”, with various toppings that ranges widely.  The integrity of well-cooked short-grain rice is, of course, important, which is a subject I won’t even touch today for it’s so not the focus here (fine, two words, rice cooker!).  The focus here is the topping, and the topping, my friend, is a promiscuous playground for something that we all, at any given moment, got 1 or 2 stashed in a dark corner within the pantry.

Canned meats.

Good sardines in olive oil from Europe, bad sardines in olive oil from Europe, not-bad sardines in tomato sauce from Southeast Asia, corned beef, tuna, salmon… SPAM!  Misunderstood and badly represented, where people see them as shunned practices of desperation, I see them as cherished and indulging delicacies.  Good quality canned sardines (or even just the OK ones), with just a light touch of acidity, grated ginger and scallions piled over warm rice, can transform into surprising deliciousness of elegance and complexity.  How can I douse sichuan chili oil over diced SPAM, with a few drops of black vinegar and calling it a thing?!  Well, that is too, what doubters said at the historical moment when somebody thought why not smearing a bit of mustard over hotdogs…  Then browned corned beef, mixed with chopped kimchi and gochujang, toasted sesame oil and grated garlic… will have you breathing stinky and happy.

Each of the donburi will take… 2 min to put together at the most (not including the cooking-time of the rice).  Less than the time it takes to boil a pot of water.  And they will have you asking yourself, where have they been all your life?

MISO CARBONARA W/ MINI SAUSAGE MEATBALLS

THIS COULD VERY WELL BE, THE ONLY SENSIBLE THING THAT SHOWS UP HERE FOR THIS ENTIRE WEEK…

Jason is going away for this entire week.  This isn’t the first time it happens, nor is it a rare occurrence.  But what you’ll feel differently about this week, not including this particular post, is going to be somewhat of a breakthrough.  Thing is, if you had any presumptions about me, as someone who likes to cook and carries out every meal big or small, with a sense of class and dignity, for the next 7 days, you’ll find your theory… horrifiedly misguided.  Pretty scallion-oil chicken rolls on a pedestal?  Gourmet popcorns to accompany DVD-binging?  Pffff~ pleeease… you’re too cute.

The fault, is mine.  For I haven’t exactly been honest about what goes on in here, when there’s absolutely nobody watching.  Truth is, like comedians being freakishly quiet off stage, cooking for me, is a hobby that erodes with the absence of audiences.  Truth is, what I “cook” for myself and myself only, is inexcusably, for lack of better words, horrendous.  So here I am.  I don’t know where I found such commitment, but I’ve sternly decided that we (as, you and me) have entered a phase in our relationship, where “truth” is required for the hope of a sustainable future together…

Which prompted this new segment I would call, as previously mentioned:  The stuff Shit I Eat When I’m By Myself.

Do not be mistaken that these are products of desperations.  You’d hurt my feelings.  They are all – and it takes great courage to admit – “foods” that I sickeningly and hopelessly, love to eat.  Regardless the fact that you may find them only socially excusable, if I was a college student who just spent the the last $20 on alcohol school supplies.  Some of them may be accompanied with a “recipe”, as others may, thankfully, not.  But whatever you will take away from this, I hope that they at the very least, entertains you.

So enjoy this one before “The Shit” hits the fan, the last proper dinner I made before the “audience” decided to leave me to rot in the land of culinary-ruin, creamy and nutty miso carbonara with tiny sausage meatballs.  For this could very well be the only sensible thing that shows up here for this entire week.

DEEP-FRIED XL HAMBURGER PATTY… DOUSED WITH LAVA-LIKE JAPANESE CURRY… WITH A DEFENSIVE PILE OF SHREDDED CABBAGE AND PICKLES

BEING not quite a licensed psychologist but more of a serial psycho-analyzer, I believe it must mean something, whether wishfully cute or symptomatically alarming, when your husband starts to lie to you about… what he had for lunch.  I mean it must

I’m not suggesting anyone to panic if similar clinical signs start to emerge in your marital routines or relationship.  Because based on my own study – lasting 6-plus years since the first, then constant episodes – the impact on the delicate harmony of nuptials isn’t exactly dire, but nonetheless, worth further investigation.  To continue, I guess I have to present the evidence of its first symptomatic appearance…

Back in the years when we were still in New York, for the longest time I was made to believed that in the barren wasteland far-far-away called “the financial district”, more often than not, poor he had to survive on a “very small cup” of Korean stew from a corner-deli (holding out both of his thumbs and index fingers to form a tiny circle) with an unfinished small bowl of steamed rice and kimchi.  Shoulders hunched and holding my sympathy hostage, his unspoken demand for a more nourishing dinner were usually met without any challenge.  Little did I know… until the first time I finally met him for lunch… The alleged “very small cup” turned out to be a venti TUB!  That amount can feed a Victoria’s Secret model for a month on her best eating days!  From then on, I take his lunch answers – “a few bites on a 6″ cold-cut subway and 1/2 of an oatmeal cookie”, “a small steamed bun with a little side of sautéed pepper and beef, but very little beef”, “a box of noodle that I ate half-way… only”, “zucchinis…”, “NO lunch” – with the scars of the deceived.  Who the hell knows, he could’ve sexed cheese burgers raining down with confetti then washed’em down by a keg of dark ale and instead just said, “some sliders at happy hour”.

But these were not the most shameful episodes you see.  The siren of his guilt-driven lies only sounds louder when all specifics are avoided, with just the misleading type of restaurants given…
