CRANBERRY VIENNESE SANDWICH CREAMS

THEY ARE THE COOKIE-VERSION OF A FEEL-GOOD MOVIE, EMOTIONALLY EQUIVALENT TO A BOX OF GOLDEN TWIN-PUPPIES EACH HUGGING A HAPPY GIGGLE.

This is what I’ve been busy with for the past 7 days, recreating Mark & Spencer’s Viennese raspberry sandwich creams.  What does that say about me, spending 84 hours scrutinizing a processed junk-food from a super chainstore, I don’t know.  But I had to make it.

If you ever had childhood experience of reaching into a tin-box, and sneaking one of those buttery nuggets of vanilla cookies into your mouth as your first memory of pure foodgasm, then I guess, you can sort of understand.  But this, this is better, upgraded.  You can either go to your nearest M&S to see for yourself, or you can stay here and do it at home.  But how I got here, however unexpectedly long it took, was no vanilla road.  Checking out all the trusted recipes that were already out there, which, affirmingly, were all very similar to one another, let’s just say that I thought it was gonna be easy.  If they all agreed on it, it must work fine, right?  Humppphhh

I made my first batch last weekend.  Well, it did work fine… how do I put it… wonderfully just okay I guess.  Wonderful in the sense that, flavor-wise, it was exactly what Viennese cookies are supposed to taste like, fireworks of buttery crumbs exploding in a vanilla sky.  No doubt about that.  But just okay because, and maybe I was being obsessively anal about it but still, I had a major textural issue with them.  It was one thing to have cookies with so much butter that they “melt in my mouth”, but it was something else entirely when they could barely hold themselves together even under the slightest pressure of a finger.  Like, I was scared to touch them… like literally, they eroded on my fingers.  I mean, if that sounds like a “dat a problem?” to you, then great, but I might add that they also had a paste-like and almost glue-ish texture in the mouth that… I just couldn’t quite get over.

CHOCOLATE CUPCAKE, HARDLY ANY  NEWS.

BUT A PROMINENTLY SALTY AND SWEET BUTTERCREAM, REALLY GETS ME EXCITED

THERE are good, convenient reasons why, I’ve never made cupcakes before.

There are things best left unknown, things that, let’s just say, won’t help you enjoy your favourite foods by knowing.  Like the day I peed myself a little when I first poured in all that heavy cream, running as thick as blood, into making my most beloved Hokkaido “milk” toast two years ago.  Oh mommy, it wasn’t milk… it wasn’t milk…  And the same reasons that my fingers and soul trembled when, for the first time, I soiled my naive perception of a brioche dough with a rudely awakening amount of reality-butter.  That stormy night, the brioche was soft, but innocence was dead…  And then so many times after that, the freedom for ice cream was terrorized… and the guiltless-ness of salads wilted away…  Let’s not even go there, where now every time when I gaze upon the starry sheen of a melty crispy and chewy chocolate chips cookie, the rim of fat around my waist reverberates in echo of the truth behind its sublimity…  As a cook, I thought I wanted the truth.

I couldn’t handle the truth.

Tough Crowd Longan Cake

I’m always puzzled where people get their optimism from. I have this friend. She’s a walking team of cheerleaders in a single unit, comes with flowers and sunshine with balloons and all that stuff. If you feel like a worthless piece of sxxt, I’d have you call her so you can feel like a brand new piece of chocolate nougat instead. Or a cat like a tiger and a chicken like a peacock… always the brighter side of life if you know what I mean. In all honesty, I’m usually extensively annoyed by such characters whom I call the self-hypnotized with false expectations. But the exception is that I ADORE her because she seems so genuinely living, breathing and walking in her bubbling enthusiasm and positivity 24/7, that even a light-sensitive vamp-downer like me can’t seem to dampen her spirit. How does she do that? She will forever be a mystery of nature to me. But hey, this is my blog and I’m only bringing her up so I can talk about myself.
