MOLTEN SPICED BROWN SUGAR DONUTS

IT COLLAPSES AND MELTES TOGETHER INTO A VISCOUS DEEP BROWN GOO WHEN IT SURRENDERS TO THE WILLFUL STEAM INSIDE AN EXPANDING, FRYING BUN

As previously confessed on my Instagram (read for context), these days, I’ve been physically and mentally occupied with being a responsible dog mom.  This recipe was developed to be brought to Sesame and SRB’s playgroup – as one is required to do when one’s children are the least well-behaved amongst their peers – to maintain an illusion of their waning popularity and postpone the likely inevitable timing when they get officially kicked out.  When the stake is this high, mom goes to town.

So I’m proposing these fluffy yet chewy donuts stuffed with dark brown sugar that is formerly massaged with honey, vanilla extract, sea salt and spices until all parties clumped into a lustful wet sand, which then fatefully collapses and melts together into a viscous deep brown goo when it surrenders to the willful steam inside an expanding, frying bun.  It’s needless to describe to you how the molasses-y sweetness that’s brought into focus by a hint of cardamon, cinnamon and sea salt, oozes slowly out of a warm pillow, and how narrow of a window they will remain in their best possible state shortly after they came warm out of the fryer.  And so as my respect for these donuts demands, I seized and honored the moment and as a result, none of them had made it to fulfill their original intended purpose.  I’m not explaining anything but just saying.

SANDY OLD MAN ON X’MAS

  

ONCE THESE PIPING HOT, LIGHT AND AIRY DONUTS HIT WHAT I CALL THE “CHRISTMAS SAND”, THE HOUSE WILL INSTANTLY SMELL LIKE SWEET, BUTTERY AND EGGY HOLIDAY SPIRIT.

Quickly leaving you today with something awesome I discovered in Hong Kong.  And it comes with a funny name, too, called Sandy Old Man!

I found it at a traditional Catonese-style pastry shop and thought to myself that it was just donuts, but as I bit into the sugar coated fried dough, this little fella instantly sank into an airy sponge with soft and almost custardy interiors.  After some much needed research, turned out that this thing which they call “Sandy Old Man”, are essentially pâte à choux donuts!  By frying this classic cream puff-dough, you get a slight crispier exterior with almost hallow interior, permeating a salivating aroma of eggs and butter.

Traditionally Sandy Old Man are only coated in granulated sugar, but come on, it’s Christmas.  Granulated sugar turns into light brown sugar, then festivity turns into a pinch of ground cinnamon, cloves and a slight sprinkle of salt.  Once the piping hot, light and airy donuts hit what I call the “Christmas sand”, the house will instantly smell like sweet, buttery and eggy holiday spirit.

I’ll take this sandy old man over Santa any day.

UPDTAE 2015/12/14:  The original measurement of 1/2 cup of flour worked for me, but because many had commented that their batter was too thin, I adjusted the recipe to 1/2 cup + 2 tbsp.

UPDATE 2016/01/11:  About comments that mentioned the batter was too thin – I tested the recipe again (added some weight measurements in the recipe, too) and it worked great with me.  Please note the “dough” should actually resemble a very thick batter.  By the way, I also just found out from my trip to Lisbon that these actually came from Portugal originally, and are called “sonhos” there which sounds  a lot like “sandy old man” in Chinese!  All makes sense now… :)

SANDY OLD MAN ON X’MAS

Ingredients

    BATTER:
  • 1/2 cup (118 grams) water
  • 3 tbsp (42 grams) unsalted butter
  • 2 tsp sugar
  • 1/8 tsp salt
  • 1/2 cup + 2 tbsp (87 grams) all-purpose flour
  • 2 eggs
  • Canola oil for frying
  • X'MAS SAND:
  • 1/2 cup light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/8 tsp cloves
  • 1/4 tsp salt

Instructions

  1. In a small pot over medium-low heat, add water, unsalted butter, sugar and salt, then cook until the water is hot enough to melt the butter (it should not boil). Turn off the heat and add the flour all at once, and stir with a fork until it comes into a smooth and even dough. Transfer the dough to a stand-mixer or into a large bowl, and stir for another min to cool it slightly. Add 1 egg and beat it into the dough until completely lump-free and smooth, then add the second egg and beat until the batter is shiny and smooth.
  2. Add enough canola oil to a small frying pot over medium heat. The oil's ready when it bubbles up gently around an inserted wooden chopstick. Scoop up around 1 tbsp of batter with one spoon, then scrape it gently into the oil with another spoon. Turning constantly and fry until the batter has puffed up (ALMOST DOUBLED in size, and will probably form a crack on the surface) and golden browned on all sides. This should take about 6 min to happen. If the donut browns too quickly before it puffs up, then the oil is too hot, and you should adjust the heat accordingly. Repeat with the rest of the batter.
  3. Drain the donuts thoroughly and set aside on a paper-towel to cool for 1 min, then coat it all over inside evenly mixed X'mas sand. Serve immediately.

APPLE FUNNEL CAKE W/ APPLE YOGURT SORBET

I STARED HATEFULLY INTO THE FUNNEL CAKE LADEN IN CINNAMON SUGAR AND MELTED CREAM, THEN REACHED OUT MY TENTACLES AND TOOK ANOTHER “ONE LAST BITE”

I think we’ve all been there.  There, every year in the first week of June, when the temperature abruptly severs from the safe briskness that was Spring, and ready or not, takes a sudden dive into the skin-binding, armpit-greasing humidity and heat that lays the red carpet for the bikini-season to come.  When we realize that it’s already too hot to cuddle with the safety of our long-sleeves and sweatpants, but when we look down upon the masses that used to hanged so discreetly underneath the winter-coats around our waists, thighs and oh-fuck-everywhere, we see the rings of humiliations, as if in an awkward smile, still hanging.  And for the epic beach vacation forever in planning and the sleeveless dress that’s been waiting since 2005, that it is once again, all too late.

That moment came, or shall I say, ambushed me last weekend while I was spending an otherwise lovely afternoon on the patio of our favourite hang-out, The Taco Bar.  As usual, after an epic feast, we sat there rounding up the finale on their fantastic funnel cake with vanilla ice cream, which came in an oversized Chinese porcelain bowl as big as the size of our winter delusions, and all of a sudden, the sky clouded up and a low thunder roared deeply in the air (I’m not shitting you).  Right then and there, in a time-freezing moment amidst the pre-summer warmth, as shocking and hollowing as any unanticipated bad news, I felt the tip of my multi-rimmed belly and the surface of my bulging thighs behind the veil of the thin fabrics, unexpectedly… touched.  Yes, touched I said.  There are you who would either laugh this off completely as science fiction, the normal people.  Or there are you who would nod profusely in empathy, most of whom have been through a pregnancy of some sorts.  But me?  I’m just the f-word.  In the awakening, I stared hatefully into the funnel cake laden in cinnamon sugar and melted cream, but instead of pushing it away, I reached out my tentacles and took another “one last bite”…

That.  That was the moment when I realized… I had to come up with a version that is at least 5% healthier.

MOCHI DONUTS

THIS, may come as a surprise to hear.  Or not… judging from how you rationalize things.  Well, let’s just say based on the look of things on this blog, this will come either as a gasping surprise, or, as the most obvious conclusion to any.  But what I’m trying to tell you, and this is a true story, is that every night before I go to sleep, the ever-last thought that I’m either saying or thinking before drifting into oblivion is alway this…

#$#$^@#!! I swear I’m gonna go on a fucking diet.

It’s true.  You see the thing is, I’m a side-sleeper.  And side-sleepers feel things.  Things that, with all due respect, back-sleepers wouldn’t necessarily feel so bluntly and graphically and that is, the horror upon realizing that my gut can move freely in 180 degree angle, and rest soundly on the mattress like a soft pouch of cottage cheese.  Did you know this about my gut?  Why am I always the last to know…

I’m telling you this because I want you to know that I am not beyond reasons.  I’m aware of the normal shape of things for a humanoid, and I have acknowledgement of the ancient nutritional pyramid built by aliens to assist mankind, I swear.  There was a lemon-olive-oil-pasta-thingy that was supposed to be here today to demonstrate that I’m well-balanced and eat vegetables.  I don’t know what happened to that.. maybe because, purely guessing, that it didn’t taste as good as this donut.

Right, this is a baaad donut.  A very gooood, bad donut.  I had a sun-dress that just arrived in mail and I got very angry at it, if you know what I mean.  And you would believe me when I say that I would not surrender my prospect into a spaghetti-strap sun-dress this summer, just over any donut, wouldn’t you?

No, no I won’t, because this is not just any donut.
